Our orchards sit on terraces cut into the side of a Himalayan valley. Everything about the fruit — its colour, its firmness, its bite — comes from where it stands.

Steep valleys, thin air, and light that arrives late and leaves early.

Terraces cut into the slope, worked by the same families for generations.

Pruned in winter, thinned in summer, watched through every season.

Cold nights and bright days give the fruit its colour and its bite.

Picked by hand, at the moment the fruit is ready — not before.

Graded, laid in trays, and sent onward to a table that knows where it came from.

Twelve months of work sit behind a single box. This is what they look like, season by season.

The valley turns white for a fortnight. Everything that follows depends on these few days of weather.

Young fruit is deliberately removed so that what remains has room, light and flavour.

Hail nets, irrigation, orchard floors kept clean. The work is quiet and it does not stop.

Rain arrives, the fruit swells, and the mountain does most of the work on its own.

Fruit is picked by hand over several passes, taking only what is ready on that day.

Sorted, graded and laid into trays. What is not good enough for our own table does not travel.

A box arrives, and a year in a Himalayan orchard finally reaches the person it was grown for.
